Healthy grapes of Vidal Blanc are left hanging on the vine into the winter months. When freezing temperatures arrive, the water in the grape pulp turns to ice. The grapes are hand-harvested and pressed, this ice remains in the press and the sugar content of the resulting juice is increased. This Icewine achieve a very fine balance between acidity and sweetness and pure varietal flavours of tropical fruits such as lychee, mango, pineapple and grapefruit. Best served well chilled 6-8 °C (43-45 °F).

TASTING NOTES
Naturally frozen Vidal grapes are hand harvested at the temperature of – 12 °C and were pressed immediately after picking. Deep gold in colour with luscious aromas of sweet stone fruits, this classic Vidal Icewine displays ripe peach, mango, apricot jam, and a kiss of citrus on the finish. A rich, full-bodied Icewine with a cleansing, balanced acidity and elegant lingering finish.

WINEMAKER’S NOTES
Nectar-like in both flavor and texture, this Icewine boasts luscious notes of ripe peach and honey, which are perfectly complemented by bright and refreshing acidity. Serving Temperature: 6-8°C. Food Pairings: tropical fruits, crème brulée, fresh fruit flan, rich cheeses such as gorgonzola, aged cheddar or salty Parmesan.
