Cabernet Sauvignon Icewine are only produced at Willow Springs Winery on average three times a decade. In the best years, healthy grapes of Cabernet Sauvignon are left hanging on the vine into the winter months. When freezing temperatures arrive, the water in the grape pulp turns to ice. The grapes are hand-harvested and pressed, this ice remains in the press and the sugar content of the resulting juice is increased. This Icewine achieve a very fine balance between acidity and sweetness and varietal flavours of redcurrant, strawberry, red cherry, blossom, rose and prune are retained. Best served well chilled 6-8 °C (43-45 °F) and its perfect match is dark chocolate or blueberry cheesecake.
