Healthy grapes of Vidal Blanc are left hanging on the vine into the winter months. When freezing temperatures arrive, the water in the grape pulp turns to ice. The grapes are hand-harvested and pressed, this ice remains in the press and the sugar content of the resulting juice is increased. This Icewine achieve a very fine balance between acidity and sweetness and varietal flavours of lychee, pineapple, peach, apricot, figs and a touch of tertiary aromas of toffee, caramel and raisin. Best served well chilled 6-8 °C (43-45 °F).
